"When I first saw a recipe for Fudgy Avocado Brownies from How Sweet It Is, I knew I HAD TO have the experience of such a flavor combo, but in a gluten free version. The Chia seeds from Chosen Foods, worked as part of the perfect binder (gluten free baked goods always need a binder) once ground down.

You might think it an odd flavor combo, but once you take your first bite, you realize this is a new found comfort food. The result of this cake is beautiful. It’s a soft, moist, pudding-like, almost cheese cake quality that has a deep rich, intense flavor! It is a nutrient loaded dessert, and a somewhat special kind of cake. Ingredients:
  • Coconut flour: 1/2 cup
  • Cocoa powder: 3 tablespoons
  • Chia Seeds, ground: 3 tablespoons
  • Tapioca flour: 2 tablespoons
  • Cane sugar or natural sugar alternative: ¾ cup
  • whole eggs : 3
  • Sea salt: ½ teaspoon
  • Plain yogurt or coconut yogurt: 1 cup
  • Whole avocado, peeled, pitted and mashed: 1
  • Avocado Oil: ¼ cup
  • Gluten free vanilla extract: 2 teaspoons
  • ---------------FROSTING INGREDIENTS-------------------------
  • Fresh avocados, peeled and pitted: 2
  • Banana: 1
  • Plain yogurt or coconut yogurt: 1 cup
  • AvoMega avocado oil : 2 tablespoons
  • Cane sugar or natural sugar alternative: 3 teaspoons
  • Juice from 1 small lemon : 1Lemon
Directions:
  1. Preheat oven to 350 degrees. Prepare cake pan by lining bottom with parchment paper and lightly oiling sides with avocado oil.
  2. Sift dry ingredients together into a large bowl. Set aside.
  3. In another large clean bowl, Beat eggs with an electric hand mixer. Add remaining wet ingredients.
  4. Add wet ingredients to dry ingredients. Stir to thoroughly combine ingredients. Pour batter into cake pan. Bake for 45 minutes. Allow cake to cool. Remove cake from pan and set on rack. Make sure cake is completely cooled down before frosting.
  5. Prepare frosting right before serving cake. Add banana, yogurt, avocado oil, and sugar to a high speed blender. Blend until whipped and creamy. Frost and serve immediately. Cake will hold until next day, however the banana and avocado may turn a little darker in color.
